Because an emoji can look different on another platform or device and you might want to know how it looks, for example before sending a message from an iphone to an android phone, where the difference between the two emojis can be pretty important 😬
Another example, when you're sending a tweet on twitter, you type in an emoji, it look like exactly the same as the one from your emoji keyboard, but when the tweet is posted, Twitter replaces it by its own emoji, which can be pretty different... (see picture below)

dog face), then you will get the entire emoji list with its different appearences, platform by platform!
